Shrimp Bowl with Pineapple Salsa

This refreshing and healthy meal is full of flavor and is a warm-weather favorite.

Ingredients

  • 1 cup cooked white rice 

For the blackened shrimp:

  • 1 lb raw shrimp, peeled and deveined (size 16/20)
  • 3 tbs oil/divided (any neutral oil works)
  • 1 1/2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the pineapple salsa:

  • 2 cups fresh pineapple
  • 1 cup diced red pepper
  • 1/4 cup finely chopped red onion
  • 1 clove garlic, chopped
  • 1 jalapeno, seeded and diced
  • 1/2 cup chopped cilantro
  • Juice of 2 limes
  • 1/4 cup pineapple juice
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 avocado for garnish

Preparation

  1. Step One

    Add the shrimp to a bowl and toss with the 1 tbs of oil. Combine all the seasonings in a bowl and add to the shrimp. Toss to combine. In a large skillet over medium heat, add the remaining oil. Once your oil is hot, add the shrimp in one layer and cook on both sides (about 2 minutes per side) until opaque with a pinkish/orange color.

  2. Step Two

    Combine the ingredients for the pineapple salsa and mix. To assemble the bowls, lay some rice in the bottom of the bowls alongside the salsa and place the shrimp on top. Squeeze some lime juice on top and garnish with sliced avocado and cilantro.
